Ingredients

– 1 cup rolled oats
– 1 cup almond milk
– 1 teaspoon vanilla extract
– 1 tablespoon apple cider vinegar
– 1 cup whole wheat flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 100 g blueberries
– 1/2 cup maple syrup

Method

1. Preheat the oven to 180 degrees Celsius. Line a muffin tray with paper liners.
2. In a bowl, mix the rolled oats, almond milk, vanilla extract, and apple cider vinegar. Let it sit for about 10 minutes.
3. Combine the whole wheat flour, baking powder, baking soda, and salt in a separate bowl.
4. Pour the wet ingredients into the dry ingredients and stir until just mixed. Gently fold in the blueberries.
5. Spoon the batter into the muffin tray and bake for 20-25 minutes or until golden and a toothpick comes out clean.
