Ingredients
– 1 cup all-purpose flour
– 1 cup rolled oats
– 1/2 cup brown sugar
– 1/2 cup unsalted butter, melted
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1 cup fresh or frozen blueberries
– 1 tablespoon lemon juice
– 1 tablespoon cornstarch
– 1 teaspoon vanilla extract
Method
1. Preheat the oven to 180°C (350°F). Line a baking dish with parchment paper.
2. In a bowl, mix the flour, oats, brown sugar, melted butter, baking powder, and salt. Combine until crumbly.
3. Press half of this mixture into the bottom of the dish to form a crust.
4. Toss the blueberries with lemon juice, cornstarch, and vanilla. Spread this blueberry mix over the crust.
5. Sprinkle the remaining crumble mixture on top and bake for 30-35 minutes until golden brown.
