Ingredients
1 cup rolled oats
1 cup all-purpose flour
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup melted butter
1/2 teaspoon baking powder
1/4 teaspoon salt
2 cups fresh blueberries
1 tablespoon lemon juice
1 teaspoon vanilla extract
Method
Preheat the oven to 180°C. Line an 8-inch square baking dish with parchment paper.
Mix oats, flour, brown sugar, granulated sugar, melted butter, baking powder, and salt in a large bowl. Stir until combined.
Press half of the oat mixture into the bottom of the prepared dish to form a crust.
In a separate bowl, combine blueberries, lemon juice, and vanilla extract. Pour this blueberry mixture over the crust.
Crumble the remaining oat mixture on top. Bake for 30-35 minutes until golden brown.
