Ingredients
– 125 g butter, softened
– 1 cup sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup self-raising flour
– 1/4 cup milk
– 1 cup blackberries (fresh or frozen)
– Powdered sugar for dusting
Method
1. Preheat the oven to 180°C (350°F) and grease a cake pan.
2. Beat the softened butter and sugar together in a large bowl until creamy.
3. Mix in the eggs and vanilla extract, stirring well to combine.
4. Gradually add the self-raising flour and milk, mixing until the batter is smooth.
5. Fold in the blackberries gently, then pour the mixture into the prepared cake pan. Bake for about 25-30 minutes or until golden brown.
