Ingredients
- 1 cup dried black-eyed peas
- 4 cups water
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1 tsp dried thyme
- 1 bay leaf
- Salt, to taste
- Pepper, to taste
Method
- Rinse the black-eyed peas under cold water and remove any debris.
- Put the peas in a large pot along with the water and bring to a boil.
- Add in the chopped onion, garlic, carrot, celery, thyme, and bay leaf.
- Reduce heat and let it simmer for about 45 minutes or until the peas are tender.
- Season with salt and pepper before serving.
