Method

1. Start by rinsing the black-eyed peas under cold water, then soak them in water for about 6 hours or overnight.
2. After soaking, drain the peas and place them in a large pot with 4 cups of fresh water.
3. Heat the olive oil in a skillet over medium heat. Add the onion and garlic, cooking until the onion becomes soft and translucent.
4. Stir the onion and garlic mixture into the pot with the peas. Add salt, black pepper, smoked paprika, bay leaf, and diced tomatoes.
5. Bring everything to a boil, cover the pot, then simmer for about 30 to 40 minutes until the peas are tender.
