Delicious Bengali Methi Kumro: Fenugreek Leaves & Pumpkin Stir-Fry

Ingredients
3 cups peeled and diced pumpkin
2 cups fresh fenugreek leaves
2 tablespoons cooking oil
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 tablespoon salt
1 teaspoon sugar
1 tablespoon lemon juice
1 cup water

Method
Heat oil in a large pan over medium heat.
Add cumin seeds and let them sizzle for a few seconds.
Stir in the turmeric and red chili powder, followed by the diced pumpkin.
Pour in the water, cover the pan, and cook until the pumpkin is tender.
Finally, mix in the fenugreek leaves, salt, sugar, and lemon juice, cooking for a few more minutes.
