Ingredients
– 2 medium beetroots
– 200 g goat cheese
– 1 green apple
– 1 cup all-purpose flour
– 1 cup milk
– 2 eggs
– 1 tsp baking powder
– 1 tbsp olive oil
– Salt to taste
– Pepper to taste
Method
1. First, preheat your oven to 200°C. Wrap the beetroots in foil and roast them for about 45 minutes until tender.
2. While the beetroots are cooking, make the apple fritters. In a bowl, mix flour, milk, baking powder, eggs, salt, and pepper until smooth.
3. Grate the apple and fold it into the batter. Allow it to rest for 10 minutes.
4. Heat olive oil in a frying pan over medium heat. Spoon some batter into the pan to form fritters and cook until golden on both sides.
5. Once the beetroots are cooked, peel and slice them. Serve the slices topped with goat cheese and the apple fritters on the side.
