Ingredients
- 4 medium-sized beets
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar

- Black pepper to taste
- 100g feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 cups mixed salad greens

Method
- Preheat the oven to 200°C.
- Wrap each beet in foil and place them on a baking tray. Bake for about 45 minutes until tender.
- Allow the beets to cool, then peel and slice them into wedges.
- In a bowl, mix olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper to create the dressing.
- Toss the salad greens, beets, walnuts, and feta cheese with the dressing. Garnish with fresh herbs before serving.
