Delicious Beet And Goat Cheese Salad Recipe For Fresh Flavor

Ingredients

– 4 medium-sized beets
– 100 g goat cheese
– 4 cups mixed salad greens
– ½ cup walnuts, chopped
– 60 ml balsamic vinegar
– 60 ml olive oil
– 1 tbsp honey
– Salt, to taste
– Pepper, to taste
– Fresh herbs for garnish (like parsley or chives)

Method

1. Preheat your oven to 200 degrees Celsius. Wrap the beets in foil and roast for around 45 minutes until they are tender. After cooking, let them cool before peeling and slicing.
2. While the beets are roasting, combine balsamic vinegar, olive oil, honey, salt, and pepper in a small bowl. Mix until well combined to create the dressing.
3. In a large bowl, add the salad greens. Pour half of the dressing over the greens and toss to coat.
4. Arrange the sliced beets on top of the greens. Crumble goat cheese over the salad and sprinkle chopped walnuts on top.
5. Drizzle the remaining dressing over the salad. Garnish with fresh herbs before serving.
