Ingredients
– 500g beef, cut into chunks
– 2 tablespoons vegetable oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon curry paste
– 400ml coconut milk
– 2 cups beef stock
– 2 potatoes, diced
– 1 tablespoon fish sauce
– Fresh cilantro for garnish
Method
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onion and sauté until soft. Stir in the minced garlic and curry paste.
3. Brown the beef chunks in the onion and garlic mixture for about 5 minutes.
4. Pour in the coconut milk and beef stock. Add the diced potatoes and bring to a simmer.
5. Stir in the fish sauce and cook for 1 hour until beef is tender. Serve with rice and garnish with cilantro.
