Ingredients
– 500 g beef mince
– 400 g black beans, drained and rinsed
– 1 small onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon chili powder
– 1 teaspoon cumin
– 400 g tomato puree
– 8 corn tortillas
– 1 cup grated cheese
– Fresh coriander for topping
Method
1. Begin by heating a large pan over medium heat. Add the chopped onion and cook for about 2-3 minutes until soft.
2. Stir in the minced garlic and cook for another minute. Then, add the beef mince and cook until browned.
3. Mix in the black beans, chili powder, cumin, and tomato puree. Cook for 5 minutes until heated through.
4. Preheat the oven to 180 degrees Celsius. Next, take a tortilla and fill it with the beef mixture. Roll it up and place it seam-side down in a baking dish.
5. Repeat until all tortillas are filled. Top with grated cheese and bake for 20 minutes or until the cheese is bubbly.
