Ingredients
- 4 medium sweet potatoes
- 1 cup rice
- 2 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
- 1 cup tomato sauce
Method
- Start by peeling the sweet potatoes. Cut the top off each potato to create a hollow space for the filling.
- Rinse the rice under cold water until the water runs clear. Then, cook the rice in 2 cups of water according to package instructions.
- While the rice is cooking, heat the olive oil in a pan. Sauté the chopped onion and minced garlic until soft.
- Add the cooked rice, cumin, salt, and pepper to the onion mixture. Stir well to combine.
- Fill each sweet potato with the rice mixture. Place them in a baking dish and pour tomato sauce over the top. Bake in a preheated oven at 180°C for 30 minutes.
