Ingredients
– 1 cup pearl barley
– 1/2 cup ginkgo nuts, shelled
– 300 ml water
– 200 g bean curd
– 1/4 cup sugar
– 1 teaspoon vanilla extract
– 1/2 cup coconut milk
– Pinch of salt
– 100 ml milk (or non-dairy alternative)
– 1/2 cup fresh fruit for topping (like mango or berries)
Method
1. Rinse the pearl barley under cold water until the water runs clear.
2. Combine the rinsed barley, ginkgo nuts, and 300 ml of water in a pot. Cook over medium heat for about 30 minutes or until tender.
3. Cut the bean curd into small pieces and add it to the cooked barley mixture. Stir gently.
4. Add sugar, vanilla extract, coconut milk, and a pinch of salt. Mix well and let it simmer for 5 more minutes.
5. Serve warm or cold, topped with milk and fresh fruit.
