Ingredients
– 400g tempeh
– 1 cup barbecue sauce
– 1 tablespoon olive oil
– 4 cups mixed salad greens
– 1 cup cherry tomatoes, halved
– 1 cucumber, sliced
– 1/2 red onion, thinly sliced
– 1/2 cup corn, canned or frozen
– 1/4 cup fresh cilantro, chopped
– Salt and pepper to taste
Method
1. Start by cutting the tempeh into cubes.
2. In a bowl, mix the tempeh with barbecue sauce, then let it marinate for at least 30 minutes.
3. Heat olive oil in a pan over medium heat. Cook the marinated tempeh for about 5-7 minutes until browned.
4. In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, corn, and cilantro.
5. Add the cooked tempeh to the salad and toss gently. Season with salt and pepper before serving.
