Ingredients
600 g salmon fillets
2 cups cooked rice
1 cup coleslaw mix
1 avocado, sliced
60 ml mayonnaise
30 ml sweet chili sauce
30 ml sriracha sauce
1 tablespoon lime juice
Salt and pepper to taste
Fresh cilantro for garnish
Method
First, preheat your oven to 200°C.
Next, place the salmon fillets on a baking tray lined with baking paper.
Mix mayonnaise, sweet chili sauce, sriracha, lime juice, salt, and pepper in a bowl.
Spread the sauce mixture over the salmon evenly.
Bake for 12-15 minutes until the salmon is cooked through, then serve over rice with coleslaw, avocado, and cilantro.
