Ingredients
– 500 g chicken breast fillets
– 1 cup cornflour
– 1 tsp salt
– 1 cup vegetable oil
– 2 tbsp sweet chili sauce
– 2 tbsp peanut butter
– 1 tbsp soy sauce
– 1 tbsp rice vinegar
– 1 tbsp water
– Fresh parsley for garnish
Method
1. Cut the chicken breast into strips.
2. Mix the cornflour and salt in a bowl.
3. Heat the vegetable oil in a large pan over medium-high heat.
4. Coat the chicken strips in the cornflour mixture, then fry them until golden brown.
5. Whisk together the sweet chili sauce, peanut butter, soy sauce, rice vinegar, and water in a separate bowl. Serve the chicken with the sauce drizzled over it and garnish with parsley.
