Ingredients
1 cup mashed bananas (about 2 ripe bananas)
1 cup grated zucchini (about 1 medium zucchini)
1/2 cup brown sugar
1/4 cup vegetable oil
1/2 cup milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup chocolate chips
Method
Preheat the oven to 180°C (350°F). Line a muffin tin with paper liners or grease it lightly.
Mix the mashed bananas, grated zucchini, brown sugar, vegetable oil, milk, and vanilla in a large bowl until well combined.
In a separate bowl, whisk together the flour, baking powder, and baking soda.
Add the dry ingredients to the banana-zucchini mixture and stir until just combined. Be careful not to overmix.
Gently fold in the chocolate chips, then spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Bake for 20-25 minutes or until a toothpick comes out clean.
