Method
1. In a bowl, combine the oats and milk. Let this mixture sit for about 10 minutes to soften the oats.
2. Add the mashed banana, honey, baking powder, vanilla extract, cinnamon, salt, egg, and olive oil to the oats. Mix everything together until well combined.
3. Heat a non-stick skillet over medium heat. Lightly grease it with a bit of olive oil.
4. Pour batter onto the skillet to form pancakes. Cook for about 2-3 minutes on each side or until they are golden brown.
5. Serve the pancakes warm with your favorite toppings like fresh fruit or yogurt.
