Ingredients

– 3 ripe bananas, mashed

Method

1. Preheat the oven to 180°C and line a cupcake tray with cupcake liners.
2. In a bowl, mix together the mashed bananas, sugar, and vegetable oil until smooth.
3. Add the eggs and vanilla extract, then stir well to combine.
4. Slowly add the flour, baking powder, baking soda, and salt, mixing until just combined.
5. Pour the batter into the cupcake liners and bake for 18-20 minutes or until a toothpick comes out clean.
