Ingredients
2 ripe bananas
1/2 cup sugar
1/2 cup brown sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Method
Preheat the oven to 175°C and line a cupcake tray with paper liners.
In a large bowl, mash the ripe bananas until smooth.
Combine the sugars and oil with the mashed bananas, mixing well.
Add the eggs and vanilla extract, then stir until everything is blended.
Next, gently fold in the flour, baking powder, baking soda, and salt until just combined.
