Ingredients
- 3 ripe bananas, mashed
- 1 cup sugar
- 1/2 cup vegetable oil

Method
- Preheat the oven to 180°C. Grease a round cake pan.
- Mix the mashed bananas, sugar, and vegetable oil in a large bowl. Stir in the eggs and vanilla until combined.
- Add the flour, baking soda, and salt to the mixture. Fold in the sour cream and coconut gently.
- Pour the batter into the prepared cake pan. Bake for 30-35 minutes until a toothpick comes out clean.
