Ingredients
– 500g chicken breast, diced
– 1 cup fresh spinach
– 1 cup cherry tomatoes, halved
– 1/2 cup cucumber, sliced
– 1/4 cup red onion, thinly sliced
– 1/4 cup balsamic vinegar
– 2 tablespoons olive oil
– Salt, to taste
– Pepper, to taste
– 1/2 cup feta cheese, crumbled
Method
1. Heat a pan over medium heat. Add olive oil and diced chicken. Cook until the chicken is browned and cooked through.
2. While the chicken cooks, prepare the salad. In a large bowl, combine spinach, cherry tomatoes, cucumber, and red onion.
3. When the chicken is ready, remove it from the heat. Allow it to cool for a few minutes.
4. Pour balsamic vinegar over the salad mixture. Sprinkle salt and pepper according to your preference.
5. Add the cooked chicken and feta cheese to the bowl. Toss everything gently to combine.
