Baked Pumpkin Dip with Goat Cheese

Ingredients
400 g pumpkin, cubed
1 teaspoon olive oil
1 teaspoon ground cinnamon
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
150 g soft goat cheese
½ cup plain Greek yogurt
2 tablespoons maple syrup
2 tablespoons fresh parsley, chopped

Method
1. Preheat the oven to 200°C. Toss the pumpkin cubes with olive oil, cinnamon, garlic powder, salt, and black pepper on a baking tray.
2. Bake for 25-30 minutes until the pumpkin is tender. Stir halfway through to ensure even cooking.
3. Once finished, allow the pumpkin to cool slightly. Place the pumpkin in a mixing bowl with goat cheese, Greek yogurt, and maple syrup.
4. Mash all ingredients together until smooth and creamy.
5. Transfer the mixture to a baking dish. Bake for an additional 15 minutes until it’s warm and slightly golden on top. Garnish with parsley before serving.
