Ingredients
250 g penne pasta
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
400 g canned tomatoes
1 teaspoon dried oregano
200 g ricotta cheese
200 g grated cheese
1 cup frozen peas
Salt and pepper, to taste
Method
Cook the penne pasta according to package instructions. Drain and set aside.
Heat olive oil in a large pan over medium heat. Add the chopped onion and cook until soft.
Stir in the minced garlic and cook for 1 minute. Then, add the canned tomatoes and oregano.
Mix in the ricotta cheese and frozen peas. Season with salt and pepper to taste.
Combine the pasta with the sauce, then transfer to a baking dish. Sprinkle grated cheese on top, then bake at 180°C for 25 minutes or until golden.
