Ingredients
2.5 kg ham
250 ml maple syrup
60 ml Dijon mustard
160 ml brown sugar
1 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground ginger
250 ml apple juice
Fresh pineapple slices (optional)
Whole cloves (optional)
Method
Preheat the oven to 180°C and line a roasting pan with baking paper.
Place the ham in the pan, fat side up. Score the surface in a diamond pattern.
Mix maple syrup, Dijon mustard, brown sugar, ground cloves, cinnamon, and ginger in a bowl.
Brush this mixture generously over the ham, covering all scored areas.
Add apple juice to the pan. Bake for 1.5 to 2 hours, basting with the sauce every 30 minutes.
