- 2 ripe avocados
- 2 pink grapefruits
- 1 cup walnuts, chopped

Method
- Slice the avocados in half, remove the pit, and scoop the flesh into a bowl. Cut the avocado into cubes.
- Peel the grapefruits. Segment the fruit into bite-sized pieces, removing any seeds.
- In a large bowl, combine the salad greens, avocado cubes, grapefruit segments, and walnuts.
- In a small jar, mix olive oil, honey, Dijon mustard, lime juice, salt, and pepper. Shake well to combine.
- Drizzle the dressing over the salad and toss gently before serving.
