Ingredients
– 1 cup uncooked quinoa
– 2 cups water
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1 red bell pepper, chopped
– 1/4 cup fresh parsley, chopped
– 1/4 cup olive oil
– 2 tablespoons lemon juice
– Salt, to taste
– Pepper, to taste
Method
1. Rinse the quinoa under cold water.
2. In a saucepan, combine quinoa and water, then bring to a boil.
3. Reduce the heat and cover the pan, allowing it to simmer for about 15 minutes until the water is absorbed.
4. Once cooked, fluff the quinoa with a fork and let it cool.
5. In a large bowl, combine the cooled quinoa, tomatoes, cucumber, bell pepper, parsley, olive oil, lemon juice, salt, and pepper.
