Ingredients
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup apricot preserve
- 1 cup dried cranberries
- 1 teaspoon vanilla extract
- 1 egg
Method
- Preheat the oven to 180 degrees Celsius. Grease a baking dish.
- In a large mixing bowl, combine flour, rolled oats, brown sugar, baking powder, and salt.
- Stir in the melted butter, vanilla extract, and egg until everything is well mixed.
- Press two-thirds of the mixture into the bottom of the baking dish. Spread the apricot preserve on top.
- Sprinkle the cranberries over the preserve, then crumble the remaining mixture on top. Bake for 30-35 minutes.
