Ingredients
– 2 cups rolled oats
– 1 ½ cups milk
– 1 cup wholemeal flour
– 1/2 cup brown sugar
– 1 tablespoon baking powder
– 1 teaspoon ground cinnamon
– 1/2 teaspoon salt
– 1 cup chopped apples
– 1/3 cup vegetable oil
– 1 large egg
Method
1. Preheat your oven to 180°C and line a muffin tin with paper cases or lightly grease it.
2. In a large bowl, combine rolled oats and milk. Let this sit for about 15 minutes to soften the oats.
3. Mix together wholemeal flour, brown sugar, baking powder, cinnamon, and salt in another bowl.
4. Add chopped apples, vegetable oil, and egg to the oat mixture. Stir until combined, then fold in the dry ingredients gently.
5. Spoon the mixture into the prepared muffin tin. Bake for 20 to 25 minutes or until a toothpick comes out clean.
