– 1 cup almond milk

Method

1. Preheat your oven to 180°C and prepare a muffin tin by lining it with paper cases.
2. In a bowl, combine rolled oats and almond milk. Allow it to sit for 15 minutes so the oats can soak.
3. Mix flour, baking powder, baking soda, cinnamon, and brown sugar in another bowl.
4. Whisk together the egg and oil, then add this to the soaked oats. Stir in the diced apples.
5. Gradually fold the dry ingredients into the wet mixture until just combined. Fill each muffin case about two-thirds full. Bake for 20-25 minutes or until golden brown.
