Ingredients

Method
1. Preheat the oven to 190°C. Line a muffin pan with paper liners or spray with non-stick cooking spray.
2. In a large bowl, mix together the flour, brown sugar, baking powder, cinnamon, and salt until combined.
3. In another bowl, whisk together the eggs, milk, and vegetable oil until smooth. Pour the wet ingredients into the dry ingredients and stir gently.
4. Fold in the diced apples and oats until evenly mixed. Be careful not to overmix the batter.
5. Divide the batter evenly among the muffin cups. Bake for 20-25 minutes until golden on top and a toothpick comes out clean.
