Apple Cinnamon Breakfast Cookies

Ingredients
– 1 cup rolled oats
– 1 cup whole wheat flour
– 1 tbsp ground cinnamon
– 1 tsp baking powder
– 1/2 cup brown sugar
– 1/4 cup honey
– 1/2 cup unsweetened applesauce
– 1 egg
– 1 tsp vanilla extract
– 1 cup diced apple

Method
1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
2. Mix oats, flour, cinnamon, and baking powder in a large bowl.
3. In another bowl, combine brown sugar, honey, applesauce, egg, and vanilla, stirring well.
4. Combine both mixtures and fold in the diced apple until evenly distributed.
5. Drop spoonfuls of dough onto the prepared baking sheet. Bake for 12 to 15 minutes or until golden brown.
