Ingredients
2 cups raw mango, chopped
½ cup salt
1 tablespoon turmeric powder
1 tablespoon red chili powder
1 teaspoon mustard seeds
1 teaspoon fenugreek seeds
1 teaspoon asafoetida powder
2 cups mustard oil
1 teaspoon sugar

Method
Chop the raw mango into small pieces.
Mix the mango with salt, turmeric powder, and red chili powder in a clean bowl.
In a small pan, heat mustard oil until it’s hot but not smoking.
Add mustard seeds, fenugreek seeds, and asafoetida powder to the hot oil; let them splutter.
Pour the hot oil mixture over the mango and spices. Stir in the sugar.
