Method
1. Start by cooking the quinoa according to package instructions. Allow it to cool.
2. In a large bowl, combine the black beans, corn, cherry tomatoes, and red bell pepper.
3. Add the cooled quinoa to the bowl, mixing everything together gently.
4. Drizzle olive oil and lime juice over the mixture. Season with salt and pepper to taste.
5. Fold in the diced avocados and fresh cilantro just before serving.
