Delicious Ancient Grain Arugula Salad Recipe For Healthy Eating

Ingredients
1 cup ancient grains
1 ½ cups water
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon honey
1 teaspoon Dijon mustard
2 cups arugula
½ cup cherry tomatoes, halved
¼ cup toasted almonds
Salt and pepper to taste

Method
1. Rinse the ancient grains under cold water.
2. In a pot, combine the grains and water. Bring to a boil, then reduce heat and cover. Simmer for 25-30 minutes or until tender.
3. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
4. Combine cooked grains, arugula, and cherry tomatoes in a large salad bowl. Drizzle with the dressing and toss gently.
5. Sprinkle toasted almonds on top before serving.
