Ingredients

– 8 fresh colocasia leaves
– 2 cups of water
– 1 cup of chopped tomatoes
– 1 onion, finely chopped
– 1 teaspoon of mustard seeds
– 1 teaspoon of turmeric powder
– 1 teaspoon of chili powder
– 2 tablespoons of tamarind paste
– Salt to taste
– 2 tablespoons of oil

Method

1. Start by rinsing the colocasia leaves thoroughly. Remove the thicker stems and keep the leaves whole.

2. Bring water to a boil in a large pot. Carefully add the leaves and cook them for about 10 minutes. Drain and set aside to cool.

3. Heat oil in a frying pan. Add mustard seeds, and once they start to crackle, mix in the chopped onion. Cook until the onion turns golden brown.

4. Stir in the tomatoes, turmeric powder, chili powder, and salt. Cook until the tomatoes become soft and the oil separates.

5. Add the cooked leaves and tamarind paste into the mixture. Stir well and cook for an additional 5 minutes.
