Ingredients
– 2 cups of gluten-free pasta
– 1 tablespoon of olive oil
– 2 garlic cloves, minced
– 1 cup of cherry tomatoes, halved
– 1 cup of spinach, fresh
– 1 teaspoon of dried oregano
– 1 teaspoon of salt
– 1/2 teaspoon of pepper
– 1/4 cup of nutritional yeast
– 1 tablespoon of lemon juice
Method
1. Cook the gluten-free pasta in a large pot of boiling water according to package instructions. Drain when done.
2. Heat olive oil in a large frying pan over medium heat. Add minced garlic and sauté for about 1 minute.
3. Mix in cherry tomatoes and spinach. Cook for 3-4 minutes until spinach wilts and tomatoes soften.
4. Stir in the cooked pasta along with oregano, salt, pepper, nutritional yeast, and lemon juice. Toss everything together.
5. Serve warm and enjoy your delicious meal.
