Ingredients
– 1 large eggplant
– 2 tablespoons olive oil

– 1 teaspoon onion powder
– ½ teaspoon paprika

– 1 tablespoon chopped fresh parsley
– 1 lemon (for juice)
Method
1. Start by cutting the eggplant into 1-inch cubes.
2. Place the cubes in a bowl and drizzle the olive oil over them. Toss to coat evenly.
3. Add the garlic powder, onion powder, paprika, salt, and black pepper. Mix until all pieces are well-seasoned.
4. Arrange the eggplant in a single layer in the air fryer basket. Cook at 200°C for about 15 minutes, shaking the basket halfway through.
5. Once cooked, sprinkle the grated Parmesan and chopped parsley over the eggplant. Squeeze lemon juice on top before serving.
