Ingredients
– 100 g dark chocolate
– 100 g unsalted butter
– 2 large eggs
– 2 egg yolks
– ½ cup sugar
– 1 teaspoon vanilla extract
– ¼ cup plain flour
– A pinch of salt
– Butter for greasing ramekins
– Cocoa powder for dusting
Method
1. Preheat the oven to 200°C (400°F). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.
2. Melt the dark chocolate and butter together in a bowl over simmering water. Stir until smooth and set aside to cool slightly.
3. In a separate bowl, whisk the eggs, egg yolks, and sugar together until they are light and fluffy. Add vanilla extract to the mixture.
4. Pour the melted chocolate mixture into the egg mixture. Gently fold in the flour and salt until just combined.
5. Divide the batter equally into the prepared ramekins. Bake for about 12 minutes or until the edges are firm but the center is soft. Remove and let cool for a minute before serving.
