Ingredients
– 500 g cream cheese
– 1 cup sugar
– 1 cup double cream
– 1 teaspoon vanilla extract
– 1 tablespoon lemon juice
– 1 cup plain flour
– 1/4 teaspoon salt
– 1 tablespoon cornstarch
Method
1. Preheat your oven to 200°C (390°F). Grease a round cake pan with some butter or line it with baking paper.
2. In a large bowl, mix the cream cheese and sugar until smooth. Use a hand mixer or stand mixer to make it easier.
3. Pour in the double cream, vanilla extract, and lemon juice. Mix again until everything is well combined.
4. Add the flour, salt, and cornstarch. Mix on low speed until just incorporated. Do not overmix.
5. Pour the batter into the prepared cake pan and bake for about 40-45 minutes or until the top is dark brown and the center is slightly jiggly.
