Ingredients

– 4 egg whites
– 1 cup (220g) sugar
– 1 tablespoon cocoa powder
– 1 teaspoon vinegar
– 200ml cream
– 100g dark chocolate
– 1 tablespoon icing sugar
– 1 teaspoon vanilla extract
– Powdered cocoa for dusting

Method

1. Preheat your oven to 150°C (300°F). Line a baking tray with a sheet of baking paper.
2. Whisk the egg whites in a large bowl until soft peaks form. Gradually add in the sugar while whisking until it becomes thick and shiny.
3. Gently fold the cocoa powder and vinegar into the meringue mixture. Spread it evenly onto the lined tray.
4. Bake for 30 minutes. Turn off the oven and let the meringue cool inside for an hour.
5. Whip the cream with icing sugar and vanilla. Melt the dark chocolate, then spread it on the cooled meringue. Top with the whipped cream and carefully roll it up. Dust with cocoa before serving.
