Ingredients
– 1 can (400 g) black beans, drained and rinsed
– 3 tablespoons cocoa powder
– 1/2 cup honey or maple syrup
– 1/4 cup peanut butter
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1/2 cup dark chocolate chips
– Optional: 1/4 cup chopped nuts
Method
1. Preheat the oven to 180 degrees Celsius. Grease an 8-inch square baking dish with a bit of oil.
2. Place all ingredients except the chocolate chips and nuts into a food processor. Blend until smooth.
3. Stir in the chocolate chips and nuts by hand.
4. Pour the mixture into the prepared baking dish. Spread it evenly.
5. Bake for about 20-25 minutes or until set. Cool before cutting into squares.
