Ingredients
– 250 g plain biscuits
– 125 g unsalted butter, melted
– 600 g cream cheese, softened
– 1 cup icing sugar
– 2 cups thickened cream
– 1 cup Irish cream liqueur
– 2 teaspoons vanilla extract
– 1 tablespoon gelatine
– 2 tablespoons water
– Cocoa powder, for dusting
Method
1. Start by crushing the plain biscuits into fine crumbs. Mix the crumbs with melted butter until well combined.
2. Press the biscuit mixture into the bottom of a round cake pan to form the crust.
3. In a separate bowl, beat together softened cream cheese and icing sugar until smooth. Gradually add thickened cream, Irish cream liqueur, and vanilla extract. Mix until creamy.
4. Dissolve gelatine in warm water, then stir it into the cream cheese mixture until fully combined.
5. Pour the cheesecake filling over the crust and refrigerate for at least 4 hours, or until set. Before serving, dust with cocoa powder.
