Ingredients
– 200 g digestive biscuits (about 2 cups crushed)
– 100 g unsalted butter (1/2 cup melted)
– 500 g cream cheese (2 cups softened)
– 3/4 cup sugar
– 1 tsp vanilla extract
– 300 ml heavy cream (1 1/4 cups)
– 200 ml Baileys Irish Cream
– 2 eggs
– 1 tbsp lemon juice
– Cocoa powder for dusting
Method
1. Start by preheating the oven to 160°C (320°F).
2. Crush the digestive biscuits until fine. Mix them with melted butter. Press this mixture into the bottom of a springform cake pan.
3. In a large bowl, combine cream cheese, sugar, and vanilla extract. Beat until smooth.
4. Add Baileys, eggs, lemon juice, and heavy cream. Mix until everything is blended well.
5. Pour the filling over the biscuit base. Bake for 50 minutes. Let it cool before refrigerating for at least 4 hours. Dust with cocoa powder before serving.
