Ingredients

– 2 cups rolled oats
– 1/2 cup honey or maple syrup
– 1/4 cup melted coconut oil
– 1/2 teaspoon vanilla extract
– 1/2 teaspoon salt
– 1/2 cup nuts (chopped)
– 1/2 cup dried fruit (chopped)
– 1/2 cup chocolate chips (optional)
– 1 teaspoon cinnamon (optional)
– 1/2 cup nut butter (optional)

Method

1. Preheat the oven to 180 degrees Celsius.
2. In a large bowl, combine the rolled oats, honey or maple syrup, melted coconut oil, vanilla extract, and salt. Stir until everything is mixed well.
3. Add nuts and dried fruit to the mixture. If using chocolate chips and nut butter, include them now as well.
4. Transfer the mixture into cupcake liners placed in a muffin tin. Press down firmly to shape the cups.
5. Bake in the oven for about 15-20 minutes, or until golden brown. Let them cool before removing.
