Ingredients
– 2 cups cooked rice
– 1 can chickpeas, drained and rinsed
– 1 red bell pepper, diced
– 1 cucumber, diced
– 1/4 cup fresh parsley, chopped
– 1/4 cup olives, sliced
– 2 tbsp preserved lemon, chopped
– 2 tbsp harissa paste
– 2 tbsp olive oil
– 1 tbsp lemon juice
Method
1. Start by combining the cooked rice and chickpeas in a large bowl.
2. Add the diced bell pepper, cucumber, parsley, and olives to the bowl.
3. In a smaller bowl, mix together the harissa paste, olive oil, lemon juice, and preserved lemon until well combined.
4. Pour the dressing over the rice mixture and stir until everything is coated.
5. Serve it chilled or at room temperature.
