Ingredients

Method
1. Start by cooking the rice according to package instructions. Let it cool completely.
2. In a large bowl, mix the cooled rice, cucumber, cherry tomatoes, and parsley.
3. In a small bowl, combine harissa paste, olive oil, preserved lemon peel, salt, and black pepper. Stir until smooth.
4. Pour the dressing over the rice mixture and gently toss it all together until even.
5. Top with sliced almonds and serve immediately or chill it for later.
