Ingredients
1 medium zucchini
1 cup all-purpose flour
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
2 large eggs
2 cups breadcrumbs
Oil for frying
Method
Cut the zucchini into rounds about 1/4 inch thick.
In a bowl, mix flour, garlic powder, onion powder, salt, and pepper.
Whisk the eggs in a separate bowl.
Coat each zucchini slice first with the flour mixture, then dip in eggs, and finally roll in breadcrumbs.
Heat oil in a pan over medium heat. Fry the zucchini slices until golden brown, about 2-3 minutes per side.
