Cranberry Walnut Coleslaw With Shaved Brussels Sprouts Recipe

Ingredients

  • 300 g Brussels sprouts, shaved
  • 1 medium red cabbage, shredded
  • 1 cup carrots, grated
  • 1 cup fresh cranberries, chopped
  • 1 cup walnuts, chopped
  • 120 ml mayonnaise
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper

Method

  1. Start by preparing the Brussels sprouts. Use a sharp knife or a mandoline to shave them thinly.
  2. Take the red cabbage and shred it into thin pieces. You can use a food processor if you want it quick.
  3. Grate the carrots and chop the cranberries and walnuts. Mix all these in a large bowl.
  4. In a smaller bowl, combine mayonnaise, apple cider vinegar, honey, salt, and pepper. Stir until well mixed.
  5. Pour the dressing over the salad ingredients and toss everything together until evenly coated.
